Please welcome Paloma Lara of Paz Bakery, makers of Cheese Dots™! Talk about a career pivot…after working for more than a decade in the fashion industries of Italy and Brazil, Paloma moved to Canada in 2015 and pursued an education in Culinary Management. While going to school at Niagara College and working in a restaurant, Paloma fell in love with a local winemaker & brewer, and today they have shared passions in hospitality. Cheese Dots™ are inspired by pão de queijo (cheese bread), a Brazilian comfort food, although the approach by Paloma is different. She focuses on the traditional way of making pão de queijo in small batches, and using local Canadian ingredients like OKA cheese.
